Let’s have some broccoli

Ingredients: Per 4 servings

  • 1 broccoli
  • egg
  • caciocavallo cheese, grated
  • crustless white bread
  • milk
  • breadcrumbs
  • frying oil
  • nutmeg
  • salt and pepper

Preparation:

Put the inner part of the bread to soak in the milk. Remove the outer leaves from the broccoli, then boil it by putting into cold salted water. As soon as it is ready, drain it, cut into chunks and put into a tureen. Add a handful of Caciocavallo, the inner part of the bread well squeezed out, a whole egg, a pinch of nutmeg, and a pinch of pepper. Amalgamate all the ingredients well and use the mixture to produce several meatballs. Dip them in lightly salted beaten egg, then the bread crumbs and fry in boiling oil. Serve hot after drying on straw paper.
I usually prepare lots of them when cold I freeze them in portions and take with me at work for lunch. Healthy, yummy and easy.
