A pudding

Ingredients per 4 servings

  • ricotta cheese, Romaine
  • 5 oz sugar
  • 4 eggs
  • candied citron
  • candied orange
  • sultanas
  • 1 half cup Rum
  • 2 pinches cinnamon
  • lemon zest, grated
  • 2 tablespoons lemon juice
  • ¾ oz butter
  • 1 oz all-purpose flour
  • 1 oz sugar
  • 2 pinches salt

Preparation

Put the raisins in a bowl of warm water for 20 minutes. Pass the ricotta through a sieve and place in a large bowl. Add the sugar, a pinch of salt, a whole egg and three egg yolks, raisins (drained of the water), cinnamon, chopped orange and citron peel, lemon rind, rum, and flour. Mix well. Whip together three remaining egg whites with a pinch of salt and a couple drops of lemon juice. Halfway through whipping, add 1 oz of sugar. Carefully fold in the egg whites into the ricotta mixture and transfer to a cake pan with flat sides, greased and floured. (The pudding should arrive halfway up the side of the pan.) Cook in a 320 °F oven for 30 minutes. When done, remove from the pan and let cool. Dust with sugar mixed with cinnamon.
