Savoury omelet

  • eggs
  • salami
  • parsley
  • onion
  • olive oil
  • salt and pepper
Into a bowl beat the egg yolks and whites seasoned with salt and a little pepper, then add the diced salami and the parsley, previously washed and chopped. In a pan stir-fry some finely-sliced onion in olive oil, then pour the egg mixture into the pan and cook until golden. Serve hot.

    I stop in from Gattina and I’m trying to loose weight. I do like omelet and one can be quite creative making them.
    Hope you find the time to stop in and coffee is always on

    I recently put salami into a frittata/omelet and had a taste revelation. What took me so long?
