Anchovies in Sage

You need:

  • sage
  • all-purpose flour
  • salted anchovy
  • white wine
  • extra virgin olive oil
  • egg white
  • frying oil
Take some fairly large leaves of sage, wash them and dip in the white flour. Open and bone the salted anchovies after washing them. Cut in half and arrange between two sage leaves making them stick well to one another. Dip them in a batter made from white flour, white wine, a little extra-virgin olive oil and beaten egg white. Immerse the double sage leaves in the batter and fry in the oil until the anchovies are golden and crisp. Serve hot.
